Biscuit is a product based on flour, suger and oil. biscuit contains of less than 4%moisture and has long shelf life.

Some of advantages of these improvers are:volume increase, ability of oil reduction in formulation, postpone retrogradation, easiness of dough preparation and improve freshness and crispiness in end products.
